The crop of delicate, five-month-old rhizomes is known as baby ginger - the pride of the Australian ginger industry. At this stage, the ginger has developed the perfect flavor profile without forming appreciable fiber. Eat it straight, use it in baking, serve it with cheese and crackers or dip it in chocolate to create a delightful after dinner sweet.
